Description
Os hábitos alimentares de uma população estão diretamente relacionados com a saúde, bem estar e constituição física dessa mesma população.
Embora em Portugal se observe um predomínio da dieta mediterrânica, os hábitos alimentares variam entre populações e entre famílias de uma determinada população, dependendo da tradição, da cultura, da educação e do rendimento das famílias. Contudo, ao longo do período de frequência do ensino superior, os alunos vão alterando os hábitos alimentares que predominam em ambiente doméstico.
Tendo em consideração que a Escola Superior Agrária de Castelo Branco (ESA/IPCB) tem em funcionamento o curso de Nutrição Humana e Qualidade Alimentar (NHQA), procurou-se, através deste estudo, caracterizar os hábitos alimentares dos alunos da ESA/IPCB em ambiente doméstico, de modo a, numa fase posterior, avaliar a alteração de hábitos alimentares no final da frequência do ensino superior. Para tal realizou-se um questionário dirigido aos alunos, que decorreu na 2ª feira e 3ª feira, sobre a alimentação realizada em casa da família, no sábado anterior. Do conjunto de resultados obtidos, 171 questionários válidos, podemos concluir que a maioria dos alunos da ESA/IPCB, em ambiente familiar, faz as quatro refeições tradicionais - pequeno almoço, almoço, lanche e jantar. Contudo verifica-se que 15% dos alunos não tomaram pequeno almoço e 30% não lancharam. Observou-se um baixo consumo de sopa, apenas 38% dos alunos comeram sopa ao jantar e 16% dos alunos comeram sopa almoço, assim como baixo consumo de vegetais e fruta, o que indicia um afastamento da dieta mediterrânica.
Abstract Health, wellness and physical makeup of a population are closely related with dietary habits. Although Portuguese population mainly have a Mediterranean diet, eating habits vary among regions and families, related with tradition, culture and home income. However, during the period of attendance in higher school, students frequently change their eating habits that prevail at home. Taking advance of the Human Nutrition and Food Quality course that is available at the School of Agriculture of Polytechnic Institute of Castelo Branco (ESA/IPCB), we tried to characterize the eating habits of ESA/IPCB students at home environment, to evaluate, in a second step, the change in eating habits at the end of the frequency of higher education. In order to do this study we carried out a students' questionnaire, held on mainly on Monday or, in last option, on Tuesday, asking students to report what they have eaten on the Saturday before. We obtained 171 valid questionnaires. We could conclude that most of the students of ESA/IPCB, at home environment, have the four traditional meals - breakfast, lunch, mid afternoon snack and dinner. However, this study turned out that 15% of the students did not have breakfast and 30% didn't eat mid afternoon snack. There was a low consumption of soup, only 38% of students ate soup for dinner and 16% of students ate soup at lunch time, as well as low consumption of vegetables and fruits, which indicates a deviation from the Mediterranean diet.
