Disponível na Biblioteca da ESACB na cota C30-26148TFCEBA. Nos últimos anos temo-nos deparado com um aumento brutal dos níveis de
consumo, promovidos por uma globalização crescente.
Era imperativo a criação de um Sistema de Segurança Alimentar que protege-se
os consumidores de possíveis riscos para a sua saúde, tendo surgido então o sistema
HACCP, inspirado num sistema de segurança alimentar do programa espacial dos
Estados Unidos da América, em que este detecta os possíveis perigos para a saúde,
criando formas de os suprimir ou reduzir, até níveis aceitáveis, a sua perigosidade.
Este trabalho foi desenvolvido num talho tendo-se primariamente implementado
e avaliado os pré-requisitos, pois estes são a base para a implementação do HACCP,
baseado no regulamento (CE) n.º 852/2004.
No estudo HACCP foram analisadas todas as etapas do processo e foram
determinados 2 PCC’S, estabelecendo-se para estes as medidas preventivas, a
monitorização e as acções correctivas a tomar.
Este sistema garante ao talho, segurança na manipulação dos géneros
alimentícios, como também transmite a confiança necessária ao consumidor,
aumentando a fidelidade deste para com o estabelecimento.
